Chocolate and Cherries Cookies
Ingredients
1/3 cup all purpose flour
1/3 cup whole wheat flour
1 ½ cup traditional rolled oats
3/4 cup packed light brown sugar
1 large egg, lightly beaten
3 oz bittersweet chocolate, finely chopped
6 tbsp unsalted butter
1 cup cherries (halved or quartered)
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
(Makes approximately 2 ½ dozen cookies)
Directions
First, preheat the oven to 350 degrees. Next, combine both the all purpose flour and the whole wheat flour into a bowl. Then, add the rolled oats, baking soda and salt into the flour mixture. Stir this dry mix briskly with a whisk until well blended. Set aside.
Next, melt the butter in a saucepan over a low heat and then remove from the stove. Add the brown sugar to the melted butter and mix until smooth. Add the sugar combination to the flour and beat at a medium speed using an electric mixer until well blended. Finally, add the vanilla and egg into the batter and gently fold in the cherries and chocolate with a spatula.
Lightly spray your cookie sheet with cooking spray and then, using a spoon, drop the batter approximately 2 inches apart. Bake for 12 minutes and then pull the cookie sheet from the oven. Cool and enjoy!
